Product of the week

These fish fingers are delicious and they are also gluten and dairy free! They are from the Tesco " Free From" range, really handy to keep in your freezer and not too expensive. You get 10 cod fillet fish fingers (300g) for €3.09.

Listed ingredients: cod (65%), vegetable oil, rice flour, dried potato, maize starch, cornflour, modified maize starch, salt, white pepper, mustard powder, emulsifier (mono-and di-glycerides of fatty acids), stabiliser (xantham gum), colour (paprika extract).

Homemade rice milk

This was my second attempt at making rice milk. I made the first one with brown rice, added a pinch of salt to the milk and left out the oil. I wasn't very impressed.
This batch tastes very nice. I made it with white basmati rice because it was the only one I had but I'm going to experiment with other types.
It's such an easy recipe I think I will be buying less rice milk cartons in the shops. I wonder if you can freeze it...
Ingredients:
-1 cup cooked rice
-4 cups water
-1 tblsp sunflower oil
-1/2 tblsp maple syrup or to taste
Method:
Place all ingredients in a blender and blend for 2-3 minutes. If you want a smoother texture strain through a muslin cloth. You could use the rice solids to make porridge.

Dairy Free Avocado Chocolate Mousse

OK, if you are on a low FODMAP diet then this is probably not a good idea but I just had to give it a try. Avocados are a moderate FODMAP and, as I understand it, it means it's safe to eat a moderate amount. How much is 1/4 of a cup? A spoonful? That would just be cruel to my taste buds, I finished the whole thing... And, yes, a bit of swelling occurred but it was worth it!

There are lots of chocolate avocado mousse recipes on the Internet, I have tried a few and this is the best so far.

Ingredients:

  • 1 tbsp coconut oil, melted
  • 1 avocado
  • 1 tsp water
  • 2 tbsp dairy free cocoa powder
  • 2 tbsp maple syrup
Method:

Mix the coconut oil, avocado and water with a hand blender until very smooth. Add the cocoa powder and maple syrup and blend again. Chill in the fridge for at least an hour.
